Watermelon Feta Guacamole

It’s very fitting that today is National Watermelon Day because this is my new favorite guacamole and yes, it has watermelon in it. I’ve made this for a couple cookouts with friends this summer and always start out by warning them that those red things in the guacamole are watermelon, not tomatoes. I’ll admit that the idea of adding watermelon into guacamole seems strange, but trust me, it works. My friends seem to agree as the bowl never lasts long. The addition of feta into the guacamole is genius as well. How can you go wrong with watermelon, avocado, and cheese?

Watermelon Feta Guacamole

Guacamole is one of my favorite foods and this version is perfect for summer!

 

Watermelon Feta Guacamole

Ingredients:
3 large ripe avocados
1/3 cup chopped fresh cilantro
1/4 cup chopped red onion
1 small jalapeño pepper, seeded and finely chopped
2 T fresh lime juice
1/3 cup feta cheese, crumbled
1 cup watermelon, diced
Coarse salt and freshly ground pepper, to taste
Tortilla chips, for serving

Instructions:
1. Cut each avocado in half lengthwise. Remove the pit from the avocado and discard. Scoop the avocado from the skin and place into a serving bowl. Smash avocado with a fork until desired consistency.

2. Add the cilantro, red onion, jalapeño, lime juice, feta cheese, watermelon, salt, and pepper to the bowl. Stir to combine.

3. Serve immediately with tortilla chips.

4. Enjoy!!!
