Turkey Pesto Appetizer Bites

Can you tell we love appetizers around here? I’m almost powerless against a good dip or bite size appetizer. Here’s another simple one we served at the Christmas Cookie Exchange party. It originally caught my eye because it was so festive looking, but I think it would be a great addition to any appetizer tray. Who doesn’t love a turkey and cheese sandwich? What sets these apart from a sandwich is that the base is puff pastry instead of the traditional bread. A welcome change if you ask me!

Turkey Pesto Appetizer Bites

Pepperidge Farm Puff Pastry sheets, thawed
Turkey (thin sliced)
Provolone cheese, sliced
Basil Pesto
Cherry tomatoes, halved
Fresh basil leaves (optional)

1. Preheat oven to 400°F. Line 2 baking sheets with parchment paper. Thaw the puff pastry sheets according to the package directions.

2. Unroll the sheet onto a lightly floured work surface, then use a pizza cutter to cut the pastry into 36 small squares. Transfer squares to baking sheets.

3. Bake the squares for 12-14 minutes. Allow to cool.

4. Cut each square open to create a top and bottom piece.

5. Spread a thin layer of basil pesto onto one side of the sandwich. Add a slice of turkey and a slice of cheese.  Top with matching pastry square.

6. Finish the mini sandwiches with a small leaf of fresh basil and a cherry tomato half (held together with a toothpick).

7. Enjoy!!!
