Sausage Tortellini Soup

I’ve never been a huge soup person, but for some reason I began craving soup as soon as the weather turned colder this winter. Andy makes chili often and while I like it, I quickly got tired of it and have started experimenting with other soups. This is my new favorite! I first had this soup at a friend’s house last August and have made it a handful of times since. Sadly, I haven’t gotten a good picture of it, but I decided I couldn’t wait any longer to post this recipe. Since it doesn’t seem to be warming up any around here, I’m sure I’ll make it again in the near future and will (hopefully) update the picture then.

This hearty and delicious soup is chock full of vegetables (something I definitely don’t eat enough of on a daily basis), which is a definite plus in my book. I especially love the zucchini! While the ingredient list may seem long and daunting, this soup really comes together quickly. It’s comfort food at its finest!

Italian Sausage Tortellini Soup

1 pound mild Italian sausage
1 cup onion, chopped
2 garlic cloves, minced
5 cups beef broth
2 cups carrots, sliced
2 cans tomatoes, peeled
1 1/2 cups zucchini, sliced
1 green bell pepper, cut into 1/2-inch pieces
1 (8 ounce) can tomato sauce
1/2 cup water
1/2 tsp dried basil
1/2 tsp dried oregano
salt, to taste
black pepper, to taste
1 (9 ounce) package refrigerated cheese tortellini
3 T fresh parsley, chopped
1/2 cup parmesan and/or mozzarella cheese

1. Remove and discard casings from the sausage. In a large Dutch oven, brown sausage over. Drain, reserving 1 Tablespoon drippings in the pan. Set sausage aside.

2. Add onion and garlic to the drippings in the pan; cook, stirring constantly, until onion is tender.Add sausage, beef broth, carrots, tomato, zucchini, bell pepper, tomato sauce, water, basil, oregano, salt, and pepper, stirring well. Bring to a boil; reduce heat, and simmer, uncovered for 30 minutes.
3. Add tortellini and parsley, stirring well. Bring to a boil; reduce heat, and simmer, uncovered, 10 minutes or until tortellini is tender.
4. Ladle soup into individual soup bowls. Sprinkle each serving with cheese.
5. Enjoy!!!
