When the Superbowl rolls around, unless the Indianapolis Colts are playing, I’m usually more excited about the food and the commercials than the game itself. In fact, we didn’t even watch the game this year. Some friends of ours had date night, so we watched their kids and the TV was playing kid movies all night (Monsters University, Planes, and Madagascar). We also ordered pizza this year, but normally I enjoy making a few appetizers for us to enjoy. I think this would be a perfect appetizer for such an occasion. Since it is red and green, it’s especially suited for Christmas parties (I made it for our Christmas Cookie Exchange party), but it would be a great easy dip for any get together. It takes less than 10 minutes to throw together and I seriously could not stop eating it!
Holiday Shrimp Dip
1 (8 ounce) cream cheese, softened
2 cups frozen shrimp, thawed
1 (8 ounce) jar cocktail sauce
1 cup shredded mozzarella cheese
1/2 red bell pepper, diced
5 Green Onions, chopped
assorted crackers for dipping
1. Spread cream cheese in an even layer on a serving dish.
2. In a medium bowl, combine shrimp and cocktail sauce. Spread evenly over the cream cheese layer.
3. Sprinkle with mozzarella cheese. Sprinkle the red pepper and green onions over the cheese layer.
4. Serve with assorted crackers.
