Cucumber Bites with Garlic Herb Filling Cooking
When planning a party, it’s nice to have a few items on the menu that look impressive and taste delicious, but don’t require much prep work. This is exactly that sort of appetizer. We’re talking 2 steps here – make the two-ingredient filling and pipe it onto sliced cucumbers. I made these for the Christmas Cookie Exchange party and they went over extremely well. In fact, a friend liked them so much that she requested that I bring them to her Christmas party the following week as well. If you’re looking for a simple appetizer to round out your shower or party menu, look no further!
For the filling:
1 (5.2 oz) package garlic herb Boursin cheese
3 T heavy cream
1 cucumber, partially peeled
1. To make the filling, place the Boursin cheese in a small bowl. Add in the heavy cream and stir until smooth. Transfer the mixture to a pastry bag fitted with a decorative tip.
2. Slice the cucumber. Using a melon baller, gently scoop out most of the seeds from the center of each slice, leaving a small portion to keep the filling from falling out. Pipe a dollop of the filling onto each cucumber slice. Serve chilled.
