Quinoa salad with Avocado, Tomato and Cucumber

I’ve had a box of quinoa in the pantry for awhile and have been looking for the perfect recipe to use it. There are a few on my must-make list, but since this recipe has avocados in it, I chose it first. I’m so glad I did! It is light and refreshing with 3 of my favorite summer fruits – avocado, tomatoes, and cucumbers (all of which I have always thought of as vegetables). It’s the perfect dinner to end a hot and humid summer day. I ate this as the main dish, but it would also be a great side dish.

I wasn’t quite sure what to expect when I was making the quinoa, but loved how delicate and fluffy it was. I even thought it tasted great on its own and ate several spoonfuls before adding the other ingredients. I can’t wait to try some more recipes with this superfood, quinoa!

Quinoa salad with Avocado, Tomato and Cucumber

Ingredients:
2 cups quinoa
4 cups water
Salt
2 cups diced tomato
1 cup diced cucumber
1 avocado, peeled and diced
1/2 cup red onion, finely chopped
1/2 cup fresh cilantro, finely chopped
Juice of 4 limes (or 8 T)
1 T olive oil
Salt and pepper

Instructions:
1. Place the water, salt and quinoa in a medium pot and bring to a boil. Reduce to simmer, cover and cook until all water is absorbed (about 20 minutes).

2. Put quinoa into a medium mixing bowl to cool. Add the tomato, cucumber, avocado, red onion, cilantro, lime juice, and olive oil. Mix and season to taste with salt and pepper.

3. Enjoy!!!
