Peanut Butter Pudding Cookies
When I originally planned to make these cookies for a get together with some new friends, Andy said “Can’t you just make something you already know is good?”. Of course I didn’t let his remark stop me and it’s a good thing because Andy liked these cookies so much that he asked me to make them again the next weekend. Yep, that’s right…I baked the same cookies 2 weekends in a row (something that is unheard of in this house) and we were both very happy.
These cookies are jam packed full of milk chocolate chips, peanut butter chips, and Reese’s Pieces. If you’ve never tried a cookie with pudding mix in the recipe, you must! The pudding mix makes the cookies so soft. It’s been a week since I made these and the (few) remaining cookies are still as soft as they were the day I baked them. All you peanut butter lovers, go make these!
Peanut Butter Pudding Cookies
Ingredients:
2 1/4 cup all purpose flour
1 tsp baking soda
1/2 tsp salt
1 (3.4 ounce) box instant vanilla pudding
3/4 cup unsalted butter, softened
1/2 cup creamy peanut butter
1/2 cup sugar
1/2 cup light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 T honey
1 cup milk chocolate chips
1 cup Reese’s Pieces
1 cup peanut butter chips
Instructions:
1.Preheat the oven to 350°F. Line 2 cookie sheets with parchment paper.
2. In a medium bowl, whisk together flour, baking soda, salt and pudding; set aside.
3. In the bowl of a stand mixer fitted with the paddle attachment, beat butter, peanut butter, sugar and brown sugar on medium speed until light and fluffy. Add eggs. Add vanilla extract and honey and beat until combined. Reduce speed to low and add flour mixture, beat to combine. Add chocolate chips, reeses pieces and peanut butter chips and mix until incorporated.
4. Roll dough into a ball between your palms and place it on the prepared baking sheet. Repeat with the remaining dough. Using your palm, gently flatten the dough balls. Bake 10 minutes.
