Food, Food, and More Food

So I’ve been trying to eat healthier lately for our weight loss competition at work.  This weekend…not so much!  I made and ate all kinds of  junk!  Here’s a few of the recipes that we enjoyed over the weekend.  :)

Better Than (Insert Your Favorite Thing Here) Brownies – these are delicious!  I got the recipe idea from here, but I changed it up some.  I really had to hide these from myself b/c they are addictive!  I used:
1 batch brownies (I used a boxed mix to make it easy)
1/2 cup peanut butter chips
1/2 cup chocolate chips
Topping:
1 1/2 cup milk chocolate chips
1 1/2 cup creamy peanut butter
1/2 tablespoon butter
1 1/2 cups Rice Krispies Cereal

Mix brownies according to directions, and bake for 20-25 minutes in a 9 x 13 baking dish. Remove and top with peanut butter chips and chocolate chips, and bake for 4-6 minutes more.
While they are finishing baking, make the topping by melting chocolate chips, peanut butter and butter. Stir in cereal. Remove brownies from oven and evenly drop chocolate mixture over top.
Refrigerate for 2 hours before serving.

 

Dark Chocolate Peanut Butter Chip Cookies – these were nice and moist.  I’d make these again but I would add more peanut butter chips next time!

Blueberry Streusel Muffins – These tasted just like the little coffee cakes that you can get at Einstein Bagels.  Very tasty and easy to make!

Chopped Antipasto Salad – A copy cat of my favorite Buca di Beppo salad.  This was so good!  We’ll definitely be making this salad a lot in the future!

Italian Beef – so easy.  Take a roast and throw it in a crockpot with a jar of pepperoncini peppers.  Cook it on high for 6 hours or until the meat is cooked and tender.  Shred the meat and serve on your favorite bread with whatever toppings you want – I recommend provolone cheese and green peppers.  :)

Shrimp and Blue Marlin Po’Boys – This remoulade sauce makes this sandwich.  I’m normally not a fan of mayo/mustard sauces, but I really like this one.  My tastes have definitely changed/grown up over the last couple of years.  I think I have my husband to thank for that!
