Going Away Cookout

Saturday was a busy day! After the 5K race and Kayla’s bridal shower, we had a cookout at our dad’s house. We originally planned on having a Girl’s Night Out with a few of our close friends. I was really looking forward to a night out, but due to circumstances beyond our control, our babysitter plans fell through and we decided to have a Girl’s Night In with the kids. Not quite the same, but still fun. Then, just a few days before, we found out that our (bigger) younger brother, Matt, accepted a new job in Florida, so plans were changed once again and we had a cookout/going away party for him. The first hour or so was just family but then our friends started arriving. By the end of the night, we had a full house (at one point I think we had 15 adults and 8 kids)!

We used this opportunity to make a few appetizers, sides, and desserts.

 Angel Hair Pasta Salad – From our mom’s recipes

2 (8 oz) packages angel hair pasta
½ pound cooked bay shrimp
¾ cup chopped green onions
1 cup ranch dressing
½ cup olive oil

Cook the pasta according to package directions; drain and rinse under cold water. Mix together the pasta, green onions, ranch, and olive oil. Carefully work the shrimp into the pasta with your hands. Note: As the salad sits, it will absorb some of the dressing. Add a little dressing and mix right before serving (we added olive oil).

Crabmeat Spinach Dip in Hawaiian Bread – Another one of our mom’s recipes

1 loaf Hawaiian bread
8 oz mayonnaise
8 oz sour cream
1 package chopped frozen spinach, cooked and drained
1 Tbsp green onion
Salt and pepper to taste
1 package Ms. Knorrs vegetable soup
1 can chopped water chestnuts
Crabmeat-as much as you can mix in.

Mix ingredients and let sit 24 hours. Scoop out inside of bread. Break bread into cubes to go with dip.

Dirt Pudding – Mom’s recipe…one of Matt’s favorites growing up!

1 package of Oreo cookies
2 boxes instant chocolate pudding
½ stick of butter (or margarine)
1 8oz package of cream cheese
1 cup powdered sugar
8 oz carton of Cool Whip
3 ½ cups of milk

Put the Oreo cookies in a blender and blend until they turn to fine crumbs. Set aside.
In a large mixing bowl, mix together the pudding mix and milk according to package directions. Let set.
Next, in a separate bowl, mix together butter, cream cheese, powdered sugar, and Cool Whip. Then add this mixture to the pudding and beat well.
Layer the cookie and the pudding mixture in your serving bowl. We used a flower pot and topped it with some gummy worms!
